Tea is the most popular drink in the world, after water. But how much do we know about him? The name "tea" is correctly used only in the case of the buds and leaves of the Camellia Sinensis shrub. Infusions from other plants and flowers we have chosen to call them infusions without theine.
We all know that theine is found in tea and caffeine in coffee. But did you know that caffeine and theine are actually the same substance? Different names are used even 200 years after the isolation of the caffeine molecule to make it easier to identify the source of origin.
There is a higher amount of theine in unprocessed tea leaves than in freshly picked coffee beans. Following processing processes, the ratio changes significantly, with roasted coffee containing up to three times more caffeine than tea. Unlike coffee, whose energizing effect is strong but disappears in 1-2 hours, tea provides calm energy for up to 6 hours. This is due to L-theanine, an amino acid that, together with theine, stimulates the nervous system for a long time. It results in a relaxing state with a high capacity for concentration.
Kofi Ti teas are specialty teas from tea masters in Yunnan, China, the region with the richest tea processing tradition. They are cultivated by families who for generations have brought this job to the level of art.
